Teaching the kids to prepare & choose their own lunches is a great start to their health….Rice paper rolls are really easy to make…prep the fillings the night before & roll in the morning…or do it all the night before?!

Ingredients:
- x4 22cm round Vietnamese rice papers
- 75g cooked rice noodles
- Iceberg lettuce, roughly chopped
- 1/2 avocado, peeled, destoned & thinly sliced
- 1 grated carrot
- 1/2 red capsicum thinly sliced
- 1/2 handful fresh coriander, roughly chopped
- 1/2 handful fresh mint, roughly chopped
Method:
- Fill a dish with warm water & soak a rice paper for 5-10 sec, until pliable – then place on a sheet of kitchen paper.
- Pile 1/4 of the noodles in the middle of the rice paper.
- Top with capsicum, carrot, lettuce, avocado & pinch of herbs.
- Fold in the sides, then roll up.
- Cover with damp kitchen towel whilst assembling the rest
- Serve with the chilli dipping sauce below.
Chilli Dipping Sauce
- 2 Tbsp rice wine or white vinegar
- 1 spring onions, finely sliced
- 1/2 Tbsp raw caster sugar
- 1 fresh chillies, finely chopped (hold the chilli if kids don’t like it)
- 1 Tbsp chopped fresh coriander
- pinch of fine sea salt
Mix all ingredients together & enjoy with rice paper rolls….or even fish or tofu cakes!!!
