I LOVE SWEET POTATO!!!
Broccoli is full of calcium, magnesium, phosphorous, vit B3 & B5…plus vit C & folic acid – all which are antioxidants, anticancer, antiviral, support the liver to detox & is a great source of fibre to aid intestinal cleaning. Sweet potato also has calcium, magnesium, phosphorous, folic acid & vit C….but also betacarotene & potassium. It can actually help to act like an expectorant & dissolve excess mucous or phlegm, whilst clearing sinuses – perfect for this time of year!!
So this soup is next on my “hit list”!!
Ingredients:
- 1 brown onion, finely chopped
- 1-2 cloves garlic, finely chopped
- 500g broccoli, stem chopped finely & florets chopped coursely
- 500g sweet potato, peeled, finely chopped
- 4C (1L) vegetable stock
- 1/2C Greek yoghurt
Method:
- Heat medium sized saucepan over medium heat. Add onion, garlic, broccoli stems & sweet potato. Cook & stir for 5mins or until oniion softens.
- Add the stock & 2C water. Bring to the boil. Reduce heat to low. Add broccoli florets & cook for 15mins, or until sweet potato is tender. Set aside to cool.
- Use a stick blender or glass blender to blend the soup until smooth. Divide soup into serving bowls.
- Place yoghurt into small bowl & stir in 2Tbs water. Add some to each soup bowl & season.
