Looking for something to have on the run for brekkie or before hitting the gym.
These are also perfect for the kids to take to school…with sunflower seeds and chia seeds added for protein and bonus magnesium, zinc, ,selenium and good fats.
Perfect way to use up some extra banana’s!!
Ingredients:
- 2 bananas, mashed
- 1/4C milk (your preferred choice to soak chia seeds)
- 1 egg, beaten
- 1-2tsp honey
- 1/2tsp vanilla essence
- 1.5C rolled oats, add more if needed
- 1-2tsp ground cinnamon
- 1/2tsp baking powder
- pinch of salt
- 1/4C chia seeds, soaked in milk
- 1/3C sunflower seeds
Method:
- Preheat oven to 175C, lined baking sheet with parchment paper or use silicone sheet.
- Mix banana, milk and chia seeds, egg, honey and vanilla in a bowl. Stir in oats, cinnamon, baking powder, sunflower seeds and salt until well combined. Add more oats if too runny…or a touch of water if too dry.
- Spoon mounds (1Tbs) of batter a few centimetres apart on baking sheet.
- bake in moderate preheated oven until tops look dry and edges are golden, about 15-18mins.
Enjoy straight away or you can freeze for later…so make a double batch and freeze for lunchboxes!
