Looking for a tasty treat that you could even enjoy for breakie if you wanted too?! Here’s a simple recipe everyone will love – replace the nuts with seed of choice & the kids can take them to school.
Packed with protein, complex carbohydrates & fibre, plus high in magnesium, manganese, copper, molybdenum, potassium, phosphorus, folate, iron, & zinc – kidney beans are the secret ingredient to this recipe.
Ingredients:
- 420g can of kidney beans (or chickpeas, cannellini, black or butter beans), drained & rinsed
- 3 eggs
- 3 Tblsp olive oil
- 1tsp vanilla essence
- 1/4 C cacao
- 1 banana
- 8 dates, roughly chopped
- 1/2tsp baking powder
- 1/2C chopped nuts/seeds, plus extra for topping
- 100g chopped glace red bush apple (optional, local fruit available from Greenies)
Method:
- Put all the ingredients into a food processor & whizz up until all is smooth.
- Pour into square cake tin or muffin trays.
- Scatter extra nuts or red bush apple pieces over the top.
- Bake in moderate oven, 180C for 45-50mins.
