With the kids going back to school shortly…why not get them to make their ‘own’ healthy muesli bars???!!!
Full of nutrients, protein, essential fatty acids – all for BRAIN POWER!!! And about $5 per dozen bars – that’s great for every one! 😉
You can make some for you too…..add nuts of your choice if not an issue for you – just keep the “nut-free” option for school.
Nut Free Bars
Ingredients:
- 1.5 C rolled oats
- 3/4 C shredded coconut
- 1 C dried fruits of choice (sultanas, or chopped apricots, dates etc)
- 1/4 C sesame seeds
- 1/4 C pumpkin or sunflower seeds
- 2 tsp cinnamon
- 1 Tbsp coconut flour (to aid binding)
- 3/4 C honey (adjust depending on consistency)
Method:
- Preheat oven to 180°C & grease & line baking tray with baking paper.
- Into large mixing bowl add all dry ingredients & mix thoroughly.
- Add in the honey & mix together, adjusting amount if needed.
- Spoon & press firmly into baking tray.
- Bake in oven for ~30mins, till golden brown.
- Once cooked – cool down, then transfer to fridge to ‘set & cool’.
- Slice into 4 x 6cm bars.
Enjoy within a week…but if my house is anything to go by…. they won’t last that long!!! 🙂
Nut & Oat Bars (fruit free)
Ingredients:
- 1 C mixed raw nuts, roughly chopped
- 1 C rolled oats
- 1/4 C sesame seeds
- 1/2 C shredded coconut
- 2 tsp cinnamon
- 3/4 C honey
- 1 Tbsp coconut flour
Cacao Nut Bars (gluten free)
Ingredients:
- 2 C raw mixed nuts & seeds, roughly chopped
- 1/2 C shredded coconut
- 1/2 C cacao nibs
- 3/4 C honey
- 1 Tbsp coconut flour
Prepare all recipes the same way….too easy!!!
