I tried this out last night with some Jewfish….any fish will do.
Simply set up the oven…maybe serve with some sweet potato fries & salad like I did.
Simple & delish!!
Ingredients:
- 10-20 mint leaves
- 1/4C dry-roasted nuts
- 1/4C parmesan cheese
- 1-2 clove garlic, crushed
- 2 spring onions, chopped
- 1Tbsp olive oil
- 2 pieces of fish
- lemon or lime wedges to serve
Method:
- Preheat oven to 180C. Line a baking tray with foil or baking paper.
- Put mint, nuts, parmesan, garlic, spring onions & olive oil into food processor & blend.
- Lay fish onto lined tray & spoon nut mixture onto fish.
- Bake for 15-20mins until cooked through.
- Serve with steamed veggies & lemon/lime….or salad & sweet potato oven fries like I did!
