Rice paper rolls are quite easy to make, tasty & can be packed with a variety of fillings. Make them the night before & kept in lunch box covered with a damp paper towel for freshness.
- chop up hard boiled egg, cooked quinoa, shredded carrot, red cabbage & julienne beetroot tossed in apple cider vinegar
- shredded chicken, avocado, cooked brown rice, coriander tossed with egg mayonnaise & soy sauce then layered with thinly sliced cucumber & baby spinach
- tuna, cooked brown rice & mashed with chickpeas & lemon juice & tahini, steamed mashed pumpkin, shredded lettuce, capsicum
How to make:
Soak the rice paper wrappers one at a time in warm water for 30sec, then place on damp tea towel. Place 1/2 cup filling into middle of wrapper cylindrically shaped, then fold over each short end. Roll up tightly & serve with dipping sauce.
Dipping Sauces to try:
- low fat yoghurt, Dijon mustard & chopped chives
- squeeze of lemon juice
- tamari sauce
- low fat yoghurt & chopped mint
