Well….if you’re like me & love mangoes – you might have bought a tray or two this season?! Maybe now “you’re over eating them daily” so what can you make today & still reap the benefits later??? Simply dice up the mangoes & put into ziplock bags to freeze & use whenever & however you like!!
Below is a great recipe that I’m sure everyone will love…. 😉
Mango Chicken!!
- 1 chicken breast, diced
- 2 spring onions, chopped
- 1 red capsicum, sliced into sticks
- handful or two green beans, chopped inch pieces
- 1 Mango, diced
- 2-3 garlic cloves, finely chopped
- 1-2 chilies, chopped
- bunch coriander, chopped
- Juice of 2-3 oranges
- coconut oil
- Brown chicken in wok using coconut oil, add garlic, chili, beans, spring onions.
- Add in orange juice, spring onions & coriander. Continue to stirfry till just veggies tender.
- Serve over bed of brown rice. Serves 4, suitable for freezer.
