For those who enjoyed our inaugural 3 Wishes Retreat….you’ll know how good these can be!! Full of antioxidant & flavour the whole family will enjoy. You can really added any grated or finely diced veggies into this dish. Try it tonight!!

Ingredients:

  • 2 large red capsicums, cut in half & deseeded
  • 1C brown rice/quinoa, cooked
  • 1 large tomato, chopped
  • 1/2 zucchini, diced/grated
  • 1 carrot, grated
  • 1/2C LSA (linseed, sunflower, almond meal)
  • 4 cloves garlic, crushed
  • 1/4tsp chilli powder, or 1 fresh chilli
  • 1 medium onion, finely chopped
  • 1Tbsp Tamari
  • Fresh coriander

Method:

  • Place capsicum halves in ovenproof dish
  • mix all ingredients together & spoon into capsicum halves
  • Cover dish with foil
  • Bake in moderate oven for 1/2hr, or until vegetables are tender.
  • Serve with fresh garden salad
