For those who enjoyed our inaugural 3 Wishes Retreat….you’ll know how good these can be!! Full of antioxidant & flavour the whole family will enjoy. You can really added any grated or finely diced veggies into this dish. Try it tonight!!
Ingredients:
- 2 large red capsicums, cut in half & deseeded
- 1C brown rice/quinoa, cooked
- 1 large tomato, chopped
- 1/2 zucchini, diced/grated
- 1 carrot, grated
- 1/2C LSA (linseed, sunflower, almond meal)
- 4 cloves garlic, crushed
- 1/4tsp chilli powder, or 1 fresh chilli
- 1 medium onion, finely chopped
- 1Tbsp Tamari
- Fresh coriander
Method:
- Place capsicum halves in ovenproof dish
- mix all ingredients together & spoon into capsicum halves
- Cover dish with foil
- Bake in moderate oven for 1/2hr, or until vegetables are tender.
- Serve with fresh garden salad
