For those who enjoyed our inaugural 3 Wishes Retreat….you’ll know how good these can be!! Full of antioxidant & flavour the whole family will enjoy. You can really added any grated or finely diced veggies into this dish. Try it tonight!!
2 large red capsicums, cut in half & deseeded
1C brown rice/quinoa, cooked
1 large tomato, chopped
1/2 zucchini, diced/grated
1 carrot, grated
1/2C LSA (linseed, sunflower, almond meal)
4 cloves garlic, crushed
1/4tsp chilli powder, or 1 fresh chilli
1 medium onion, finely chopped
Place capsicum halves in ovenproof dish
mix all ingredients together & spoon into capsicum halves
Cover dish with foil
Bake in moderate oven for 1/2hr, or until vegetables are tender.
