Yep….taste just like cake cake….only healthier!
Ingredients
- 1C pitted dates
- 1/2C cranberries
- 1C almond meal or LSA (Linseed, Sunflower, Almond meal)
- 1 carrot, grated
- 1tsp nutmeg
- 1tsp cinnamon
- 1/3C desiccated coconut
Method:
- Soak dates in water for 10-15mins to soften. Drain & place into food processor.
- Add cranberries, almond/LSA meal, carrot, nutmeg & cinnamon into processor with dates & process until almost smooth.
- Chill mixture for 15-20mins before rolling tablespoons of the mixture into balls
- Roll in coconut to coat.
- Refrigerate till need. They can be frozen for a later date….enjoy!!
