Looking for an easy, affordable lactation cookie that’s gluten & egg free??!

Ingredients:

  • 2.5C steel cut/rolled/GF oats
  • 4Tbls ground Flaxseed (linseed)
  • 1/2C filtered water
  • 6Tbls coconut oil
  • 3/4C coconut sugar (or alternative)
  • 1/4C brewer’s yeast
  • 1tsp vanilla extract
  • 1/2tsp baking soda
  • 1/4tsp Himalayan salt/sea salt
  • 2/3C dark choc chips (optional)

Method:

  1. Preheat oven to 180oC & line tray with baking paper or grab silicone tray
  2. Add 2C oats into blender & process them into fine flour.
  3. In large bowl combine ground flaxseeds with water, stir well to mix.
  4. Add coconut oil, coconut sugar, brewer’s yeast, vanilla& stir well to combine.
  5. Gradually stir in oat flour until smoot dough is formed, then fold in 1/2C of oats & choc chips (optional).
  6. Roll mixture into 3cm balls with damp hands, then place onto baking tray & press down with fork to flatten them.
  7. Bake at 180oC for 10-12mins, until cookies are light golden brown
  8. Allow cookies to cool, then transfer to wire rack to cool completely.
  9. Enjoy with a cup of my organic Breastfeeding Herbal Tisane!!
