Do you still have some mangoes lying around???
Why not try this for lunch or a light & healthy dinner!!!
You can add some cooked prawns or shredded chicken if you’d prefer……
I’m sure the whole family will love them!!
Ingredients:
- x8 22cm round Vietnamese rice papers
- 150g cooked rice noodles
- Iceberg lettuce, roughly chopped
- 1 mango, peeled, destoned & thinly sliced
- 1 avocado, peeled, destoned & thinly sliced
- 1-2 red chillies, finely chopped
- 1 handful fresh coriander, roughly chopped
- 1 handful fresh mint, roughly chopped
Method:
- Fill a dish with warm water & soak a rice paper for 5-10 sec, until pliable – then place on a sheet of kitchen paper.
- Pile 1/8 of the noodles in the middle of the rice paper.
- Top with mango, lettuce, avocado, chilli & pinch of herbs.
- Fold in the sides, then roll up.
- Cover with damp kitchen towel whilst assembling the rest
- Serve with the chilli dipping sauce below.
Chilli Dipping Sauce
- 3 Tbsp rice wine or white vinegar
- 2 spring onions, finely sliced
- 1 Tbsp raw caster sugar
- 1-2 fresh chillies, finely chopped
- 2 Tbsp chopped fresh coriander
- pinch of fine sea salt
Mix all ingredients together & enjoy with rice paper rolls….or even fish or tofu cakes!!!
