Here’s a great dip to serve up this Christmas….with the added cauliflower is packs in some extra calcium, magnesium, folic acid, potassium, vit C & beta-carotene. Cauliflower is also good for hypertension, constipation, purifies the blood & bursting with antioxidants! Team it up with veggie sticks to get some extra nutrients into your day.
Ingredients:
1 small cauliflower
1/2C tahini
1tsp ground cumin
1tsp smoked paprika
2 lemons, juiced & some grated rind
125ml extra virgin olive oil
3 garlic cloves
400g canned chickpeas, rinsed & drained
1tbsp dukkah (or your homemade lightly roasted nuts & spice mix)
smoked almonds to garnish
Method:
- Preheat oven to 200oC, line baking tray & place cauliflower on tray. Spread with half tahini & sprinkle cumin & paprika, & lemon rind. Drizzle with olive oil, roast for 1-1.25hrs until golden brown & tender. Let it cool.
- Transfer roughly chopped cauliflower to food processor with garlic, chickpeas, lemon juice & remaining tahini. Process till smooth, adding remaining 60-70ml olive oil. Thin with water if needed.
- Garnish with remaining spices & dukkah – serve with veggie sticks or toasted pitta bread.
