Broccolini, Avocado & Mint Dip

This sounds like a quick & yummy to share with friends on the weekend! Full of magnesium, calcium, good fats & so simple.

Ingredients:

  • 1Tbsp Olive oil
  • 1 Red Chilli, thinly sliced (deseeded if you like)
  • 1 bunch broccolini, thinly sliced
  • 1 large ripe avocado, halved
  • 3Tbsp sour cream
  • 1/3C Mint leaves, shredded
  • 1 lime, halved & juice

Method:

  1. Gently heat oil in non-stick pan – add chilli & broccolini & saute 3-4mins until broccolini is bright green & tender.
  2. Transfer to plate & set aside to cool.
  3. Mash avocado & add in sour cream & mint – stir to combine.
  4. Swirl through the broccolini mixture.
  5. Add lime juice to taste, season & serve with corn chips or veggie sticks.
