Broccolini, Avocado & Mint Dip
This sounds like a quick & yummy to share with friends on the weekend! Full of magnesium, calcium, good fats & so simple.
Ingredients:
- 1Tbsp Olive oil
- 1 Red Chilli, thinly sliced (deseeded if you like)
- 1 bunch broccolini, thinly sliced
- 1 large ripe avocado, halved
- 3Tbsp sour cream
- 1/3C Mint leaves, shredded
- 1 lime, halved & juice
Method:
- Gently heat oil in non-stick pan – add chilli & broccolini & saute 3-4mins until broccolini is bright green & tender.
- Transfer to plate & set aside to cool.
- Mash avocado & add in sour cream & mint – stir to combine.
- Swirl through the broccolini mixture.
- Add lime juice to taste, season & serve with corn chips or veggie sticks.
