One of my favs – avocados are a complete whole food…packed with protein, good fats, magnesium, potassium, vitamin E, & fibre.
Ingredients:
- 2 green apples, grated with skin on
- 1 avocado, cubed
- 1/2 fennel, finely diced
- 1C rocket
- 2 spring onions, thinly sliced
- 1 tsp capers
- 1Tbsp fresh dill, roughly chopped
- sprinkle of nuts/seeds of your choice & feta cheese if you like
Dressing:
- zest of 1 lemon
- juice 1/2 lemon
- 1tsp olive oil
- salt & pepper
Combine all ingredients & drizzle with the dressing & enjoy!!
