Looking for something to team up with your favourite fish, then check out this fresh tasting, cooling salad!

One of my favs – avocados are a complete whole food…packed with protein, good fats, magnesium, potassium, vitamin E, & fibre.

Ingredients:

  • 2 green apples, grated with skin on
  • 1 avocado, cubed
  • 1/2 fennel, finely diced
  • 1C rocket
  • 2 spring onions, thinly sliced
  • 1 tsp capers
  • 1Tbsp fresh dill, roughly chopped
  • sprinkle of nuts/seeds of your choice & feta cheese if you like

Dressing:

  • zest of 1 lemon
  • juice 1/2 lemon
  • 1tsp olive oil
  • salt & pepper

Combine all ingredients & drizzle with the dressing & enjoy!!
