For the inaugural 3 Wishes Workshop, I had prepared these tasty meatballs….which everyone loved & wanted the recipe….so here it is!! Something you can make & serve with veggies or a tasty salad for the whole family tonight…even the kids will love them. They make a great addition to lunch boxes too! If you don’t have the exact fresh herbs, use dried or what ever herbs you like.
Ingredients:
- 500g free range chicken mince
- 2 eggs
- 1/4C oat meal
- 2 chillies, finely chopped
- 1/2 onion, finely diced
- 2-3 garlic cloves, finely chopped
- Small bunches sage/tarragon/thyme, chopped
- Coconut oil to fry
- 200ml low fat natural yoghurt
- Small bunch fresh mint, roughly chopped
Method:
- In large bowl mix garlic, chilli, herbs & onion into chicken mince
- Add in lightly beaten eggs, & oat meal to bind all ingredients together
- Take roughly tablespoon mixture & roll into meatballs
- Cook evenly in batches in fry pan with coconut oil – love the smell, & added health benefits!
- Drain on paper towel
- Mix yoghurt & mint together & serve with chicken meatballs
- Makes about 25 meatballs
