A delish salad which has it all….beetroot packed with betalains to support liver detox, to the protein & iron rich lentils…& the greens for fibre & are excellent to aid the removal of toxins.
- 4 beetroot, peeled & cut into bite-sized pieces
- x2 400g tins lentils
- 4 spring onions, thinly sliced
- 1C mint leaves
- 1C baby rocket
- sea salt & freshly ground pepper
Ginger Dressing
- 1Tblsp grated ginger
- 1/2C extra virgin olive oil
- 2tsp dijon mustard
- 1Tblsp apple cider vinegar
Method:
- Place beetroot in saucepan, cover with water & bring to the boil. Reduce the heat & simmer, covered for 15mins or till tender. Drain & set aside to cool
- Combine lentils, spring onions, mint & rocket in a bowl. Gently fold in the beetroot & season to taste.
- To make refreshing dressing, place all ingredientsinto food processor & blend until smooth. Gently toss through the salad & serve.
