A delish salad which has it all….beetroot packed with betalains to support liver detox, to the protein & iron rich lentils…& the greens for fibre & are excellent to aid the removal of toxins.

  • 4 beetroot, peeled & cut into bite-sized pieces
  • x2 400g tins lentils
  • 4 spring onions, thinly sliced
  • 1C mint leaves
  • 1C baby rocket
  • sea salt & freshly ground pepper

Ginger Dressing

  • 1Tblsp grated ginger
  • 1/2C extra virgin olive oil
  • 2tsp dijon mustard
  • 1Tblsp apple cider vinegar

Method:

  • Place beetroot in saucepan, cover with water & bring to the boil. Reduce the heat & simmer, covered for 15mins or till tender. Drain & set aside to cool
  • Combine lentils, spring onions, mint & rocket in a bowl. Gently fold in the beetroot & season to taste.
  • To make refreshing dressing, place all ingredientsinto food processor & blend until smooth. Gently toss through the salad & serve.
