Salmon is one of the power-houses of seafood – packed with omega 3’s and essential fatty acids….perfect food to fuel our brains & balance hormones.
Serves 4
Ingredients:
- x4 wild-caught skin on salmon
- 2Tbsp extra virgin olive oil
- salt & pepper
- lemon or lime wedges
- small bunch fresh coriander
- 2Tbsp fresh mint, chopped
- 1Tbsp garlic, chopped
- 1Tbsp finely grated lemon or lime zest
- 1Tbsp lemon or lime juice
- pinch of chilli flakes
Directions:
- Coat the salmon in olive oil and season with salt & pepper. Set aside for 10mins.
- Combine herbs, garlic, 1Tbsp olive oil, citrus zest & juice in blender….blend until smooth & fragrant.
- Heat a chargrill on the BBQ or inside grill plate on med-high heat.
- Place salmon skin side down until it’s charred & fish is almost cooked through (10-15mins).
- Turn the fish over & grill for a few more minutes until is cooked to your liking.
- Remove from the grill & place skin side up onto a plate. Dollop with salsa & serve with lemon/lime wedges.
- Serve alongside a tasty salad such as…..this refreshing cabbage salad!
