Sauerkraut is such a great way to add some good probiotics into your diet naturally. With simple ingredients – it’s rich in vitamins C, B, A & K…plus heaps of minerals too. Add it to sandwiches, serve on the side of any dishes, even breakfast…perfect in poke bowls and even cheese platters. And…cheap!!
Ingredients:
- 8C red or green cabbage, finely chopped
- 1.5-2tsp sea salt
- 1 small beetroot (grated, optional)
- 3 whole carrots, grated
- 3Tbsp fresh ginger, grated
- 3Tbsp fresh turmeric, grated
- 4 cloves garlic, finely diced
- 5-6 cloves
Method:
- Sterilise jars by either pouring boiling water over clean jars and lids, then allow to dry completely. I prefer the glass preserving jars with metal clip or mason jars. Or put into dishwasher and wash, allowing to be dried completely, then return to room temperature before use. extremely important to allow proper fermentation.
- Into a large mixing bowl, add cabbage with 1.5tsp sea salt sprinkled over.
- Wash hands thoroughly, then massage cabbage for 10mins. the cabbage will start to soften, shrinking in size and releasing water.
- Add shredded beetroot, carrot, ginger, turmeric, cloves and garlic. With clean hands massage and thoroughly combine all ingredients. Taste test for flavour, adjust with ginger, garlic, salt etc as needed.
- With clean hands, add mixture into sterilised jars and press down firmly to pack. There should be enough liquid to sit just above the vegetables. If this doesn’t happen, top with filtered water.
- Ensure there’s 3-4cm between the contents and the lid so there’s room to expand.
- Seal with the lid, and place in kitchen cupboard (without direct sunlight) for 5-10days. The length of time needed is up to the individual and does depend on the climate.
- During fermentation time, it’s best to open the jars to release air pressure. You can press down the contents with a sterile spoons so all is below the water level to encourage proper fermentation.
- The longer it sits and ferments, the tangier it will become – taste randomly with clean fork to suit you. Once it is where you prefer, place in the fridge and it will last 3-6mths.
