Tasty Green Mango Salad

I’ve yet to try making this salad myself….but my friend Jo makes one very similar with green paw paw & it’s delicious! Keep an eye out at the markets for some green mangoes….or paw paw. The herbs will also provide some medicinal attributes with all of them aiding digestive problems such as flatulence, nausea & cramps.

Ingredients:

  • 2 green mangoes (or one green paw paw)
  • 1C fresh Thai basil leaves
  • 1C fresh coriander leaves
  • 1/2C fresh mint leaves
  • 170g mini grape tomatoes, halved
  • 2 Tbsp fish sauce
  • 2 Tbsp lime juice
  • 1 Tbsp finely grated palm sugar (or brown sugar)

Method:

  • Peel mangoes (or paw paw) & cut away the flesh, discarding the seed.
  • Slice the mango into thin matchsticks.
  • Combine mango with herbs & tomatoes in a bowl.
  • To make dressing whisk together fish sauce, lime juice & palm sugar, till sugar is dissolved.
  • Pour dressing over salad & gently toss.
  • Garnish with either lightly fried shallots or crushed nuts. Throw in a little finely chopped chilli if you’re feeling adventurous!
