Ingredients:
- 2 cups vegie stock
- 1 avocado
- 1 brown onion, chopped
- 2 cloves garlic, chopped
- 2-3 broccoli florets
- 1 green or red capsicum, roughly chopped
- 1 celery stalk, roughly chopped
- Celtic sea salt, to taste
- Add cumin, fresh basil or coriander to taste, or even some chili!?
Method:
- Heat the vegie stock in large pot, but don’t boil.
- Add onion, garlic, capsicum, celery & broccoli to stock, & warm for several minutes.
- Put warm soup into the blender, add avocado & puree until soup is creamy. Add more water if needed.
- Season & flavour with herbs & spices. Serve warm.
