Try this alkalising ‘beauty’….Broccoli & Avocado Soup!!

Ingredients:

  • 2 cups vegie stock
  • 1 avocado
  • 1 brown onion, chopped
  • 2 cloves garlic, chopped
  • 2-3 broccoli florets
  • 1 green or red capsicum, roughly chopped
  • 1 celery stalk, roughly chopped
  • Celtic sea salt, to taste
  • Add cumin, fresh basil or coriander to taste, or even some chili!?

Method:

  1. Heat the vegie stock in large pot, but don’t boil.
  2. Add onion, garlic, capsicum, celery & broccoli to stock, & warm for several minutes.
  3. Put warm soup into the blender, add avocado & puree until soup is creamy. Add more water if needed.
  4. Season & flavour with herbs & spices. Serve warm.
