Create your own toasted muesli, with what ever takes your fancy…..or what ever is in the cupboard! Buy organic if possible & enjoy with natural yoghurt.
Ingredients:
4C rolled oats
2C chopped mixed nuts (brazil/almonds/cashews/walnuts)
1/2C sunflower seeds
1C Chia bran
1C desiccated coconut
1C coconut oil
1/2C maple syrup or Manuka honey
1 1/2tbsp cinnamon
1 tbsp sea salt
1 1/2C sultanas
1/2C Goji berries
1C chopped dates
Preparation:
Preheat oven to 170°C
In a large bowl, combine oats, nuts, sunflower seeds, chia bran & desiccated coconut.
In small saucepan melt coconut oil & add honey, cinnamon & salt – stirring to combine & warm.
Pour the liquid over the dry mixture & mix well.
Spread mixture over large lined baking tray.
Place in oven for 20mins, stirring every 5mins. Bake till toasted & golden.
Remove from oven & pour into large bowl, stirring to cool down.
Add dried fruit now to prevent it from burning in the oven.
Store the muesli in an air tight container, in a cool place to keep it crunchy.
