Sometimes I hear it can be all too hard to eat ‘something nutritious’ in the morning….or maybe you don’t feel like eating in the morning….but you keep hearing my voice telling you to have breakfast daily. Here’s a couple of recipes packed full of nutrients to make it that little bit quicker in the mornings.

Mango Almond Smoothie

  • 1 mango, seeded, peeled, chopped (betacarotene, vit C)
  • 1/2C reduced fat Greek-style yoghurt (calcium, vit D)
  • 1Tbsp almond meal (calcium, magnesium, phosphorus, zinc, folic acid, B2, B3 vit E)
  • 1tsp manuka honey/agave
  • 1/2 pulp passionfruit to serve

In a food processor or blender, process all ingredients except passionfruit – until smooth. Top with passionfruit. Makes 500ml, 253 cal/1058kJ serve. Protein packed start to the day.

 

Green Juice

  • 1/2C baby spinach leaves (betacarotene, folic acid, potassium, B6, vit C, calcium, magnesium)
  • 1/2C pineapple, peeled & chopped (calcium, magnesium, phosphorus, potassium, folic acic, vit C, bromelain)
  • 1/2C green seedless grapes (potassium, iron, copper, manganese, vit C, vit K, vit A, resveratrol)
  • 1/2C coconut water (magnesium, potassium, B vits, sodium, iron & bioactive enzymes)
  • 1 small banana, chopped (potassium, tryptophan, vit C, betacarotene, vit K, B6)
  • 1tsp mint leaves
  • ice

Into food processor or blender, process all ingredients till smooth. Serve over extra ice on these hot summer days! Makes 700ml, 194cal/814kJ serve. Alkalising & aids digestion.
