Well the Dry Season is here (or did we actually have a “wet”??)…..& with us all having busy lives, it can take a bit to think about what to eat day in day out. This recipe has your vegies in it & is tasty so all the family will love it!
50g unsalted butter
1 large onion finely chopped
750g potatoes or sweet potatoes, peeled & roughly chopped
2 leeks, white part only cut cross ways in narrow strips
2 carrots, peeled & roughly chopped
1 litre stock
2 cloves garlic, finely chopped
Bunch of fresh herbs, I use rosemary
Chives to garnish
Method:
Melt butter in saucepan, add the onions & cook till soft – not coloured.
Add the garlic, potatoes, leeks & carrots until all vegies are coated.
Add the stock & bunch of herbs. Season with salt & pepper & simmer for 30mins, until vegies are tender.
Remove the herbs & put the vegies through a blender, or use a stick blender.
Serve sprinkled with chives.
