With the kids back to school this week after a long weekend, you’ve just thrown together the ‘same old’ lunchbox foods….maybe some fruit, sandwich, muesli bar or packet of crackers. Why not get them onto a healthier start….along with you!!
Get the kids involved….learning to cook & prepare food sets them up for life, & they will enjoy their food more when they’re involved.
Here’s some simple recipes to get you started….quick & easy!!
Rice Paper Rolls -Why not make some for all to enjoy….so light, refreshing & tasty with a variety of fillings found HERE!!
Good Green Dip
Ingredients:
- 100g spinach (fresh or thawed from frozen – squeeze out excess water)
- 1 Avocado, flesh only
- 1/2C Greek yoghurt, plain
- 3 spring onions
Method:
- Put all ingredients into a food processor & process until combined. You can add a squeeze of lemon juice if you like to taste.
- Serve with carrot/celery/capsicum/cucumber sticks ….or use in wraps with added grated carrot, shredded lettuce, chopped boiled egg or tuna.

Oat Choc Cookies – Gluten Free & packed with protein, magnesium, zinc, iron & good fats….with a little sweetness.
Ingredients:
- 1 1/2 Tbs Chia seeds
- 1/3C water
- 1C plain GF/Quinoa flour
- 1C Rolled Oats
- 1/2C desiccated coconut
- 1/3C raw/coconut sugar
- 1/4C Peptitas(pumpkin)/Sunflower seeds
- 100g butter, melted & cooled
- 25g dark choc/cacao chips
- 1/4C sultanas/goji berries etc
Method:
- Preheat oven to 180 C. Line x2 baking trays with baking paper. Whisk up chia seeds & water in a small bowl. Set aside, stirring occasionally as it thickens.
- Combine flour, oats, coconut, sugar, pepitas in a large bowl. Make a well in the centre & pour in the butter & chia mix, use your fingers to combine. Stir in choc chips & fruit choice.
- Roll @2tsp portions of oat mixture into balls. Place on lined trays & flatten slightly. Bake for 10mins or until cookies are lightly golden. Transfer to wire rack to cool.
