I tried this out last night with some Jewfish….any fish will do.

Simply set up the oven…maybe serve with some sweet potato fries & salad like I did.

Simple & delish!!

Ingredients:

  • 10-20 mint leaves
  • 1/4C dry-roasted nuts
  • 1/4C parmesan cheese
  • 1-2 clove garlic, crushed
  • 2 spring onions, chopped
  • 1Tbsp olive oil
  • 2 pieces of fish
  • lemon or lime wedges to serve

Method:

  1. Preheat oven to 180C. Line a baking tray with foil or baking paper.
  2. Put mint, nuts, parmesan, garlic, spring onions & olive oil into food processor & blend.
  3. Lay fish onto lined tray & spoon nut mixture onto fish.
  4. Bake for 15-20mins until cooked through.
  5. Serve with steamed veggies & lemon/lime….or salad & sweet potato oven fries like I did!
