Whilst over in NZ…my hubby & I unfortunately fell ill – so we used kiwifruit in many forms to boost our immune system & aid digestion. Try this fresh & tasty salad that I’m sure all your friends & family will enjoy. Full of protein with the nuts & seeds, chicken & feta…plus bursting with vitamin C from the red capsicum, strawberries & kiwifruit.

Ingredients:

  • 5C fresh baby spinach & rocket leaves
  • 8-10 firm ripe strawberries, sliced
  • 1 kiwi fruit, peeled & sliced
  • 1/2 red capsicum, sliced
  • 1/4C natural sunflower seeds/pepitas/pine nuts
  • 1/2C feta cheese, crumbled
  • 4-8 thinly sliced red onion rings
  • 1 skinless chicken breast, grilled & sliced
  • Kiwifruit dressing to serve (see below)

Method:

  • Rinse leaves, strawberries, capsicum; pat dry
  • Combine leaves, strawberries, capsicum & kiwifruit in large bowl
  • Add nuts/seeds, feta & onion
  • Toss lightly & top with grilled chicken breast strips
  • Top with dressing & enjoy!!

Kiwifruit Dressing

  • 3-4 Kiwifruit, peeled
  • 1/4C extra virgin olive oil
  • 1/4C white wine vinegar
  • 1/2tsp dry mustard
  • pinch of raw sugar/agave to sweeten if needed

Put all ingredients into a blender & mix until smooth. Store in fridge.
