Time & time again I hear about how it’s really hard to get kids to eat their veggies. Ok…..so I don’t have kids to know the real struggle….but there must be a limit to where you can’t just feed them chips or biscuits everyday?! It’s not good for their growing little minds & bodies….

These look like a great alternative for your kids – big or small! Crunchy on the outside & tasty treats served with a lemon/lime & mint yoghurt dressing along side salad….or even homemade sweet potato fries if you must?!

Ingredients:

  • 185g can of pink salmon, well drained (or tuna if you prefer)
  • 2Tbsp finely chooped chives
  • 1 zucchini, grated
  • 1 egg, lightly whisked
  • black pepper
  • 1/4C plain wholemeal flour (or coconut flour for coating)
  • 2Tbsp oil for frying
  • lemon/lime wedges to serve

Method (makes 10):

  1. Combine all ingredients except flour into large bowl. Use your finger to crush up the salmon bones (great source calcium, magnesium, potassium).
  2. Squeeze the mixture into golf-ball sized amounts Toss in the flour to coat evenly.
  3. Heat the oil in frying pan over medium heat. Cook the balls in the oil for 5-6mins (turning over in oil) until golden.
  4. Remove the balls & drain on paper towel.
  5. Serve alongside a salad with lemon wedges & an easy yoghurt dressing.
