Family….who needs them??!!

Well the answer for me is – I DO!!

I don’t know about you…but sometimes family can drive you a little stir crazy??!! It can be a love-hate relationship on the surface sometimes…but deep down it’s truly a love relationship – well, for me anyway.   🙂

With Easter fast approaching, we often spend more time with loved ones over the holidays. We all have our quirks…some that are annoying to others….some that are cute. It’s all about knowing how to ‘go with the flow’ & not turn their drama into your drama. Believe me…I know that can be trying sometimes. Recently, I think I’ve managed quite well with this on a few occasions. I honestly wanted to ‘go with the flow’ & have a great time & not get bogged down…I consciously chose positivity.

I know, I know….life isn’t always supposed to be rosy. There is negativity in the world, in many shapes & forms. But I’ll share a little secret with you…my ‘problem’ or how I react to some people was weighing me down – & it’s not where I want to be. I don’t want to be negative…I want light & fun & positivity.

So I worked on it….with Flower Essences. I sat down & really focused on the ‘nitty gritty’ of the relationship…& how that made me feel. A Year in Reflection….

How has ‘Your Year’ been???

Were you true to Yourself….& followed the paths you chose as best as You could…even if things didn’t go completely as planned???

Somehow I managed to achieve most that I hoped for…there were some challenges professionally & personally – but hey, I had to keep pushing through. Not saying all is ‘perfect’…just content with where I’m at.  And that’s all that’s important – as long as you’re happy with all that You do. Don’t worry about what others think of your choices.

We all have different circumstances & at stages in life. We set our own goals; have desires & wishes…but the one thing I feel is important, is that we move – & not get ‘stuck’ somewhere waiting for it all to come to us. ‘Cause babe….that ain’t gonna happen.

Only YOU can set your mind to be all you wish…only YOU can ‘turn it up a gear’ – no matter what ‘that’ is for YOU. There are often curve balls thrown in our way for good measure in life, in some shape or form…it’s how YOU deal with those that matters.

I hope You can reflect back on ‘Your’ 2017 & pat yourself on the back & smile….Yes I did it!

Life is a roller coaster….how do YOU ride it?!!

One of My Favourite Christmas Treats….

Shortbread has been part of my Christmas tradition since I was a child. My sister & I used to make it with my mum for Christmas & give to family as gifts. As an adult I continued the tradition & enjoy making it listening to Christmas Carols….my husband is sad he only gets to enjoy it once a year – unfortunate for him?!!

I normally do the traditional version…only real butter, sugar, rice & plain flour. This year I’m going to do a mix to include gluten-free for a friend….here’s the recipe for everyone to enjoy!!

Ingredients:

  • 3/4C Cornflour (check the ingredients – should be just corn, cheaper versions may not be)
  • 1C Rice flour
  • 1/2C Castor sugar
  • 175g butter, softened (extra for greasing tray)

Methods:

  1. Preheat oven to 150ºC
  2. Sift cornmeal & rice flour & sugar together into medium bowl.
  3. Add the butter & work into the dry ingredients till it forms a soft dough. Refrigerate for an hour.
  4. Cover baking tray with greased baking paper.
  5. Roll out & shape dough into 3cm cookies on greased paper, with 4cm gap between each. Flatten with a fork. Makes about 20 cookies.
  6. Bake for 20-25mins, or until edges are lightly golden.
  7. Let them cool, then you can wrap in paper for Christmas gifts or enjoy fresh out of the oven.  🙂

Healthy Festive Tips….

With lots of parties with family & friends in the next couple of weeks….we ALL overindulged this time of year. Trying to keep some BALANCE is the key.

  • Firstly…be kind to yourself…& those around you. It’s good for your mind & soul.
  • Yes…you probably will indulge, but try to eat/drink the healthy stuff as much as possible. Enjoy plenty of healthy salads & veggies to go with festive foods.
  • Water…it IS your friend. Especially up here…drink it up!!!
  • Get out & about…go for a walk early morning to beat the heat, or at night to check out the Christmas lights.
  • Find some time out just for you…it helps you to ground your feelings & settle the mind…it can be an emotional time of year.
  • Smile when you greet people…even when you’re on the phone – they can ‘hear’ your smile!  🙂

Remember….things can be difficult for some this time of year…talk to those around you when needed – look out & support each other. There’s added pressure during the Festive season which some experience…here’s some extra tips to get you through. XO

Life…

How is it our lives get soo busy….

Catching up with family & friends over the last 2 weeks back in Perth, has allowed me to reflect on how our lives sometimes move forward slowly & at other times…life seems to jump ahead. It seems some people are at that ‘constant stage’ – daily routine, lots of running around for kids, work…with a little bit thrown in for them. Others have something new happening every other month. We all move at different paces…at different stages of our life. Hence…when we compare ourselves to another we can sometimes feel we ‘have been left behind’. Please remember – we really can’t compare…we just are where we ‘are’ at this point in time.

My main focus of my trip was to spend time with my grandparents – my Nan is in a home as she has dementia. Unfortunately she has regressed quickly within a year ago from when I last saw her…though she seems to recognise my voice?! LOL! Norma introduced me to natural health when I was a little girl – we’d make pot pourri, soaps, & ‘smelly’ gifts with her essential oils. On my last visit with my dad & grandpa I took along a small heart shaped pouch filled with her pot pourri she’d made probably 30 years ago. I encouraged her to smell it…hoping her memories would come flooding back to her. I can only hope she sensed the familiarity….

My Grandpa is a lovely old man…yes he’s lost a lot of weight & is frail, but he is still sharp as a tack with a great sense of humour & much to my amazement doesn’t even have a carer looking after him at his own home. My aspiration is to live as long as his active life. Yes he’s on some medications…but who isn’t at nearly 94 years old. He still takes his fish oil, magnesium etc …& a glass of wine at dinner. He’s recently been put on oxygen overnight & when needed – but he’s still very independent, & texts me often. He has nature at his doorstep with birds visiting each day & he loves his beautiful garden.  He says he feels his time is done…now is his time to share stories of his life – with so many tales to tell.

Life…it goes round in circles. Changing from one stage, to the next. Life to me is for living a full & happy life – not just existing day to day.

Yes….we all choose our own paths, now…make the most of each beautiful step you take.

Festive Coconut Berry Tartlets

fresh-berries-and-coconut-cream-tartsIn Oz…..Christmas tends to be a warm one. So something light & tasty, which is a no-cook no-fuss dessert has got to be a winner!!

This treat will satisfy the sweet tooth & health conscious alike – full of magnesium, calcium, zinc, good fats, anti-oxidants, & protein.    🙂

Ingredients:

Base:

  • 1/4 C sunflower seeds
  • 1/4 C linseeds/flaxseeds
  • 1/4 C macadamia nuts
  • 1/4 C almond meal
  • 1 Tbsp chia seeds
  • 1/2 C pitted dates, soak in bit water
  • 1/2 vanilla bean, seeds scraped
  • 1/2 tsp ground cinnamon
  • 1.5-2 Tbsp coconut oil

Filling:

  • x2 400ml cans coconut cream – chill the tins in fridge overnight.
  • 1 C mixed berries

Method:

  1. Chill down the mixing bowl in the fridge, which you will whip the cream in.
  2. To make the base, put all ingredients together in food processor & process until smooth. The mix should stick together when pressed – but not too wet. Add extra coconut oil if not holding together, or more almond meal if too wet.
  3. Divide the mix into four individual tart tins…..or I love using a large silicone muffin tin. Press the mixture up the sides firmly to form a tart shell. Put into the freezer to firm up the bases.
  4. Open the chilled coconut cream tins & whisk up with electric beater until soft peaks form.
  5. To serve, take the tarts cases out of freezer & remove from tins/trays. Gently spoon in the whipped coconut cream & top with berries. Delicious!!
